Drinking and Pairing Verdicchio with Food

Verdicchio is the dry, crisp, lemony white wine grown mainly in Italy's Marche region. Its name is derived from "verde" (green), referring to the yellow-green color of the skin, or perhaps to its refreshing "green" character. Its best known incarnation is in the wine Verdicchio dei Castelli di Jesi, which can sometimes be found in a green, amphora-shaped bottle, but some experts contend that the lesser-known Verdicchio di Matelica is its equal if not superior.

Verdicchio is always a citrusy and high acid white wine, which makes it one of the world's great fish wines. It is particularly good with raw fish preparations such as sushi and is sublime with crudo, the Marche's raw fish specialty.
