Drinking and Pairing Soave with Food

Soave is a winegrowing district located east of Verona in Veneto, Italy. It is a dry white wine made mainly from the Garganega grape. It has good acidity and shows aromas and flavors of apples and almonds. In the past, Soave has suffered from overproduction by commercial wineries, but many smaller, quality-minded producers have emerged within the last two decades, and many excellent examples can now be found.

When fermented and aged in stainless steel, Soave is refreshingly crisp and suitable for antipasti, white fish, and the local specialty, radicchio. Some soave is being produced in wood and the wine can be rich and textural from certain producers. These richer styles pair well with richer preparations like ricotta-filled ravioli in a simple brodo of chicken stock. A sweet version of this wine, Recioto di Soave, is also produced.
