Drinking and Pairing Rueda with FoodRueda is a winegrowing region in northwestern Spain near the city of Valladolid. Rueda produces a small amount of red wine but is best known for its white wines produced from at least 50% Verdejo, and wines labeled Rueda Superior which must be at least 85% Verdejo. White Rueda is dry, normally of very good quality, and has a lot of character. It shows a crisp acidity and herbaceousness, and is said to have an underlying nutty quality. It is often blended with Sauvignon Blanc and tends to be fermented and aged in stainless steel tanks.
Pair Rueda's wines much in the same way you might a Sauvignon Blanc. It is excellent with greens dressed in vinaigrette and other sharp ingredients such as tomatoes and olives. Fish and shellfish are also natural partners.
