Grüner Veltliner is the most widely grown grape in Austria, yielding a dry, medium-bodied white wine with good acidity. Once viewed as the everyday wine of Vienna's heurigen (wine cafés), Grüner Veltliner today is held in high regard by sommeliers and the wine-drinking public for its versatility at the table. Good examples of Grüner Veltliner display typical white wine aromas and flavors of lemon and apple, but also some not-so-typical green bean, radish, and white pepper qualities.It is perhaps this unusual profile that makes the varietal pair well with otherwise difficult foods such as asparagus, artichokes, and bitter greens. Grüner Veltliner also pairs well with white fish, shellfish, and salumi.
