Drinking and Pairing Aligoté with Food

Aligoté is the straw-colored, tart, and softly scented "other" white wine of Burgundy, playing a secondary role to Chardonnay. While high-quality examples can be found in the village of Bouzeron, these dry wines tend to be somewhat neutral, and are traditionally mixed with blackcurrant liqueur for kirs.

Aligoté on its own can be a fine contrast to foods that are rich, salty, oily, or fatty.
